Active Wine Cellars vs. Passive Wine Cellars

Many people have concrete walls and believe this is a suitable climate for a wine cellar due to the concrete walls.  However, a basement wall may not produce ideal passive wine cellar conditions due to modern construction techniques.  We recommend that you have the experts at Kessick analyze your situation to determine proper insulation and vapor barrier necessities.

4 key elements that are necessary for wine to age properly are:  Constant temperature (ideally between 55-63 degrees Fahrenheit), 60-70% humidity, no outside light, and no vibrations.

While it is true that ground temperatures below 4 feet are a constant 50-55 degrees, modern basements are so well insulated from the earth surrounding them and with little or no air-penetration that the temperature will hover around 66-68 degrees. At 70 degrees, wine will start to deteriorate.

Most people think they should keep white wine chilled and their red wines at room temperature, but nothing could be further from the truth. Your kitchen refrigerator is too cold! The optimal condition for storing wine is between 53 and 57 degrees, and between 60 and 70 percent humidity. Even though it’s mainly reds that age and mature, the storage temperatures apply to all white, red, sparkling, or rose.

 Do not confuse this temperature with serving temperature…  When you are serving wine, it’s a totally different thing. White, sparking wine, and rose` should be chilled further to between 44 and 48 degrees and reds should be set up to reach about 62.

At Kessick Wine Cellars, 98% of all walk-in wine cellars that we install have climate control systems. The other 2% later wish that they had installed cooling and usually end up calling us back and spending even more money.  If you have a valuable collection or plan for long term storage, it’s best to make the extra investment.
